For a kid who is opinionated about what vegetables he will eat he sure does love kale chips. Calvin and I love to have this snack when Max is napping and could not be easier to make.
1 bag of pre cut kale from Trader Joe's
Preheat your oven to 350 degrees. On a bake sheet lightly spread around olive oil. Empty the entire bag of kale chips onto the pan. It will most likely be overflowing but it will quickly wilt in the oven so do not worry about it. Season generously with salt, pepper, garlic powder, and olive oil. Put the pan in the oven for 25 minutes. Every 5 minutes I open the oven and with a pair of tongs I move the kale around so that they do not burn on one side. Do this until the timer is up or when you can see that all the chips are crispy in appearance. Transfer the kale into your favorite bowl and voila!
Calvin loves how crunchy these are and I love how he is getting loaded up with nutrients. The only reason we do not eat these with Max is because he always chokes on the consistency for some reason. Max likes all veggies so we don;t mind him missing out on our tasty snack.
Hope your kids enjoy it as much as Calvin does. If you make sure they are crispy and not soggy in certain areas they essentially taste like a potato chip that is green, only better.
